Asian Noodle Salad, a wheat-based pasta with fresh vegetables and sesame dressing , perfect for all seasons and easy to make. You can use your preferred choice of vegetables.
Prep time: 15 min Cook time: 15 min Total time: 30 min Yield: Serves 4-6
Ingredients:
1 pound Chinese noodles
3 cups of fresh broccoli chopped florets
1 1/2 cup of mushrooms
1 cup of spring onions chopped
1 cup of red pepper sliced
1 cup of carrots chopped
Sesame dressing:
1/3 cup of soya sauce
3 table spoons of brown sugar
1 table spoon of sesame oil
1 table spoon of rice wine vinegar
1 teaspoon of minced garlic
Method:
Step 1. Cook the noodles or pasta according to package directions and then drain the noodles, rinse with cold water to cool off. Spread the noodles out on a sheet pan to air dry.
Step 2. Cover and steam the broccoli to cook for 4 minutes. Remove the broccoli from the pot, rinse with cold water and set aside.
Step 3. Make the sesame dressing by whisking the ingredients together until well blended.
Step 4. Toss the pasta with sesame dressing to coat completely and add in vegetables to toss.You can serve immediately or refrigerate for a few hours to let the flavors develop and the pasta to cool.
