These healthy vegan black bean tacos are easy to make and are full of flavor. Fill your tacos with avocado, corn, salsa and vegan sour cream. The best part is you can choose to have them for breakfast, lunch or dinner.

Ingridients:
Black beans
1 small onion, diced
1/4 cup of water for water saute
1/2 teaspoon of garlic pawder
1 teaspoon of cumin
1/2 teaspoon of dried oregano
Salt to taste
2 cans (15oz) black beans, drained and rinsed
1/4 cup of water
To serve
corn or flour tortillas, warmed
romain or lettuce, shredded
Corn salsa
avocado, sliced
chopped cilantro
Method:
Step 1.
Black beans - warm oil over medium heat In a medium pot, add onions and saute and cook for 5 minutes. Add the jalapeno, cumin, oregano, garlic powder and pinch of salt, cook for 30 seconds to 1 minute. Add the beans, and 1/4 cup of water, cover, reduce heat to low and simmer for 5 – 8 minutes. Remove from heat, smash at least 1/2 of the beans, using the back of a slotted spoon or fork. Add the remaining water as needed for desired consistency. If you add too much water, the beans will thicken upon standing. .
Step 2.
Heat the tortillas over medium and turn them often until they are lightly charred around the edges.
Step 3.
Lay the tortilla on a flat surface, top with 1/4 cup of beans, corn salsa and sliced avacado. Speinkle your favorite seasoning and squeeze lime over the tacos.
